A friend of mine graciously game me some zucchini from his garden .These were not your ordinary zucchini. One was literally the length of my thigh! So I have been having zucchini at pretty much every meal.
- Grilled zucchini, sliced long ways tossed in olive oil and cajun seasonings
- Roasted zucchini and garlic
- Sautéed shredded zucchini with sesame oil and soy sauce
- Zucchini cornbread for Bon Appetit (really delicious!)
Last but not least zucchini fries!
This recipe is inspired by and adapted from How Sweet’s onion rings which are FABULOUS.
serves 1 (2 if you are in a sharing moodJ)
1 large zucchini
2 egg whites
1/2 cup medium ground cornmeal
1/2 cup panko bread crumbs
1/4 cup whole wheat flour
1Tbs Cajun Seasoning
Pre-heat the oven to 450 degrees F. Slice zucchini into skinny fry shapes. In a small bowl, whisk egg whites. In a large bowl, combine cornmeal, flour and panko and cajun seasoning. Line a baking sheet with aluminum foil and place a wire rack on top. Spray the wire rack with non-stick spray.
Dip the zucchini pieces into the egg whites then into the panko mixture and press to coat. Place the zucchini on the wire rack spray each zucchini piece liberally with cooking spray or olive oil. Bake for 15 minutes, then gently flip with tongs and spray again with cooking spray or olive oil. Bake for 10 minutes more.
I dipped them in ranch and bbq sauce! So delicious.
